Indigenous grape Babica is an ancient varietal which is almost extinct. Babica is a Croatian varietal which is related to Zinfandel (and direct descendant of Plavac Mali) but ripens earlier, has higher acidity and lower alcohol.
It has usually been blended with other Zinfandel related varietals, but this is at the moment the only single wine in the world made purely of it. This Babica was aged 18 months in various size oak. A rustic, old world mediterrenean red with aromas of plums, earth and herbs.
Food pairing: Goat cheese, smoked meats and raw tuna.
